    Steps to make 粤式虾饺皇

    • 1.基围虾去壳,切成两段,取一小部分虾肉剁成虾泥备用
    • 2.把茭白丁和虾肉,虾泥混合,放入少量鸡精和盐,以及多量的菜油搅拌均匀(如果喜欢馅更嫩滑,可以加点剁碎的肥猪油)
    • 3.澄粉和淀粉按3:1混合
    • 4..开水烫面,一边加水一边搅拌,水不能加太多,搅拌到没有干面就可以了
    • 5.揉成面团,把面团切成一个个小剂子
    • 6.把面皮擀成圆形,按包饺子的方法包虾饺,馅不要放太多,因为虾仁受热后会膨胀,包太多容易把皮撑破。
    • 7.蒸锅烧开,把虾饺放到胡萝卜片上
    • 8.蒸5分钟左右就可以了。
