红烧猪蹄
前几日还连续高温,感叹连躲都没地方。8日凌晨4时是“立秋”节气,所谓“朝立秋,冷飕飕;夜立秋,热到头。“立秋之日凉风至”,配合着台风,果真有一种暑去凉来的舒适感觉。
  立秋,民间素有“贴秋膘”的习俗,熬过漫长的炎炎夏日,秋风一起,人们有了食欲,就要吃点味道厚的美食,炖肉、烧鱼、炖鸡鸭等等,在体内既补充了必要的营养如脂肪、蛋白质以及多种微量元素,又起到了增强肌体抵抗能力的作用,补偿夏天的损失, “以肉贴膘”,立秋吃炖肉既解了馋,又起到了保健和养生的作用。今天立秋,正好是双休日,我也来凑个热闹,买了农家土猪肉做个红烧猪蹄来解解馋吧。

Steps to make 红烧猪蹄

  • 1.猪蹄去除杂质,洗净切块。
  • 2.姜、蒜切片,八角、桂皮、辣椒洗净。
  • 3.冷水入锅,放入姜片和料酒汆水3分钟,用凉水冲尽血沫。
  • 4.锅中放少许油,下入姜、蒜、八角、辣椒炒出香味。
  • 5.放入焯水后的猪肉,加入料酒、生抽、老抽、冰糖,中小火翻炒。
  • 6.再放入豆瓣酱翻炒2分钟,使其入味。
  • 7.转移到电饭煲中,放入桂皮,慢火炖1.5—2个小时,炖到1小时后加人适量盐调味。
  • 8.快烧干时,放回到锅中,大火收汁。
  • 9.出锅,肉皮软糯,味浓适口,肥而不腻。
