趣味龙虾面包
造型上增加点儿趣味,吃起来更有乐趣。生活需要仪式感,美食需要创意。 做的是原味的,用蛋黄液刷在表面上色,也可以调少许红曲粉,让整体更有鲜红熟虾的感觉。可以根据个人喜好,包上椰蓉馅或喜欢的馅料。

Steps to make 趣味龙虾面包

  • 1.常温或冷藏的牛奶(或等量的水)倒入面包机桶内,加入酵母粉
  • 2.再用高筋粉(盖住整个液面,使盐糖与酵母粉分开)、细砂糖、盐和鸡蛋,启动和面程序
  • 3.发酵到两倍大后,取出揉去气泡,静置饧面20分钟
  • 4.制作主体:取大小合适的一块儿,揉成两头稍尖的橄榄形
  • 5. 制作尾部:另取一块,擀成薄片,按照图片切出尾部,将部位按顺序叠放好,中间用少许蛋液粘合
  • 6.用牙签和裱花嘴的圆圈,压出花纹
  • 7.制作身体的壳:再取一块面团,揉成长条,切成剂子,擀薄成圆片后对半切开,一片压一片,按照小龙虾外壳的样子包好。中间用少许蛋液粘合
  • 8.制作头部:同理,擀一大块面片,一端切三角形,包住头部,用手捏出花纹
  • 9. 制作钳子:按照先内芯,再一层层包裹的顺序,做出两个鳌,剪出钳子
  • 10.两条都这样做好,按位置摆好。搓两个小球当眼睛,照例蛋液粘合
  • 11.搓细条,一端剪开,粘少许蛋液摆在适当的位置,充当小腿
  • 12. 用牙签扎出头部孔洞的花纹。用牙签稍粗的一端,如果是尖端,发酵后就闭合了
  • 13.搓细条,摆好长须,接头在剪开的嘴部下方
  • 14.表面刷蛋液,摆在烤盘中,身体稍弯曲一点,比较有动态。二次发酵40分钟左右,入烤箱中层,上下火170度烤20-30分钟左右。具体时间和温度,要根据不同烤箱实际炉温和龙虾的个头大小,酌情增减。
  • 15.完成后取出晾凉即可
