腌黄瓜
腌黄瓜和蒜茄子一样都是我们小时候经常吃的小咸菜,虽说腌菜吃了不健康,但是偶尔吃吃也没问题的。前几天上网无意中看见这个腌黄瓜的菜谱,于是就勾起馋虫,想吃就赶紧行动,早市买了黄瓜赶紧腌起来,这不腌好了早晨喝粥那是相当不错,鲜爽可口、辣味适中,很是开胃呢。

  • 尖椒120克
  • 大蒜100克
  • 15克
  • 白糖35克
  • 高度白酒30克
  • 鸡精8克
  • 生抽85克
  • 老抽25克
  • 白胡椒粉3克

Steps to make 腌黄瓜

  • 1.黄瓜清洗后切成条状,用盐拌均匀腌制5个小时以上。
  • 2.腌制的黄瓜沥水晾干,我晾了7~8个小时,这个时间根据屋里的温度和湿度调整。
  • 3.尖椒清洗后切小块沥干水(我用的杭椒和一点点红色麻椒)。
  • 4.大蒜和姜去皮切小块。
  • 5.白酒、白糖、鸡精称量好。
  • 6.生抽、老抽称量好后混合到一起。
  • 7.生抽、老抽加入适量花椒放入小锅中煮开,然后晾凉。
  • 8.将晾好后的黄瓜、尖椒、大蒜、姜倒入一个大一些的容器里,加入白酒、鸡精、白糖、白胡椒粉。
  • 9.倒入煮好的生抽老抽,搅拌均匀。
  • 10.装入玻璃瓶子里,或是密封的罐子里,然后放入冰箱冷藏2天后就可以食用了。
