红油鸡胸
超级简单却又极好吃的一道菜,鲜香的鸡胸肉,嫩爽的金针菇,酸辣微甜回味足,最诱人的是那层红殷殷的辣子油,看着就让人流口水~~

  • 白芝麻2茶匙
  • 辣椒粉2茶匙
  • 大蒜20克
  • 生抽2茶匙
  • 香醋2茶匙
  • 白糖15克
  • 味精少许

Steps to make 红油鸡胸

  • 1.食材:鸡胸肉300克、金针菇200克、葱姜、蒜末、蚝油、生抽、辣椒粉、味精、白糖、食盐。
  • 2.鸡胸肉洗净冷水下锅,加入葱段、姜片、1茶匙料酒大火煮至微沸改小火焖煮10分钟。
  • 3.鸡胸肉中小火焖煮大约10分钟左右,关火,盖上盖子继续焖10分钟。这样焖好的鸡胸肉会更嫩一些,不干不柴。
  • 4.煮鸡胸肉的时候来处理料汁,辣椒粉和白芝麻放入碗中混合均匀。
  • 5.烧热油分次淋在辣椒粉上,快速搅拌均匀静置几分钟,一份简单的红油就做好了。
  • 6.另取一碗,依次放入大蒜末、鲜味酱油、香醋、白糖、味精、食盐拌匀。
  • 7.把步骤(5)中的红油倒入料汁碗中拌匀即成红油料汁。
  • 8.金针菇去老根洗净,入沸水锅中焯水。
  • 9.焯过水的金针菇控干水份,放入盘子底部垫底。
  • 10.焖煮好的鸡胸肉取出切片
  • 11.切好的鸡胸肉码放在金针菇上,淋上调好的红油酱汁。
