鱼香肉丝
鱼香肉丝是一道特色传统名菜,以鱼香调味而得名,是特色川菜之一。主料为猪肉、黑木耳,辅料因做法而各异,但多为胡萝卜、竹笋、辣椒等。猪肉选用三成肥、七成瘦的切丝滑炒,吃起来肉丝质地鲜嫩。
成菜色红润、肉嫩、质鲜、富鱼香味。“鱼香”与“余香”谐音,另一种说法是“余香肉丝”。余香系列的川菜,最主要的辅料是四川辣豆瓣酱。主料配以四川辣豆瓣酱加上其他调料烧出来的菜肴,其味厚重悠长,余味缭绕,回味无穷,故称余香。上世纪七十年代之前,餐馆菜单上书写的有“余香肉丝”菜名。
鱼香肉丝是我最爱的菜肴之一,每次做这道菜我都会吃两碗饭。这道菜不仅是色香味俱全,还可以营养很丰富。木耳具有益气强身,滋肾养胃,软化血管活血等功能。木耳做法很多比如凉拌泡椒木耳,煮火锅必备的食材之一。青笋具有清胃热,防癌抗癌等功效。
关于鱼香肉丝这道菜之前有这么一个冷笑话,一个外地人来餐馆吃饭,点了一道鱼香肉丝。当菜上桌之后,客人看了一下菜便叫来了老板问道:老板鱼香肉丝怎么里面没有鱼。老板说:夫妻肺片里面是不是也要有夫妻啊? 老板这样的回答让客人傻眼了。
鱼香肉丝做法很多种,但是我独爱这样的烹饪。下面来和大家分享一下。

Steps to make 鱼香肉丝

  • 1.猪肉切丝加入少许淀粉和生抽腌制。青笋去皮,切丝。木耳提前泡发好,洗干净切丝。姜蒜切细碎。
  • 2.锅中倒入适量的菜籽油。
  • 3.油熟烫之后加入姜蒜,豆瓣酱小火翻炒出香。
  • 4.接着加入青笋和木耳翻炒出香。
  • 5.接着加入肉丝继续翻炒1分钟,加入少量的白糖和醋,生抽继续翻炒。
  • 6.翻炒至肉丝完全熟透,起锅装盘撒上适量的葱就可以啦。
