    Steps to make 红烧甲鱼

    • 1.甲鱼剁去其头,锅中烧水,开后放入甲鱼稍煮。
    • 2.捞出甲鱼褪去其外皮,剖开后出去内脏,洗净切块。
    • 3.葱、姜切片,小米椒切碎备用。
    • 4.香菇泡发洗净。
    • 5.里脊肉切块后加入料酒、淀粉上浆。
    • 6.锅中放入足够的玉米油烧热,倒入甲鱼和里脊肉滑油,捞出沥干。
    • 7.锅中留底油,放入葱片、姜片、米椒炒香。
    • 8.倒入甲鱼、里脊肉翻炒,加入料酒翻炒均匀。
    • 9.加入酱油烧制片刻上色。
    • 10.倒入足够的啤酒,要没过甲鱼,放入甲鱼壳、香菇一起大火烧开后改小火烧制,至甲鱼肉烂熟即可大火收汁。
    • 11.装盘盛出即可。
