今年广州的茶餐厅流行用泰酱来入菜,我特别爱点泰酱龙俐鱼柳。酸甜微辣的泰酱,配上肉质细滑的龙俐鱼柳,再加上酸萝卜的惹味,特别开胃。

  买回龙俐鱼,想在家山寨一把,可是却忘了提前腌制酸萝卜,于是乎随意加了红黄椒、黄瓜,味道也不错,很家常。

  这道菜是我家的家宴菜,老公临时有事,本来是午宴却成了晚宴,于是乎我有大把时间捣腾菜,装上特别的盘子,配上经典的盘饰,本来不熟悉朋友,因花心思做的菜,却成了朋友,临走前问我:黄瓜桶能带走吗?

  • 龙俐鱼300克
  • 青椒50克
  • 红椒50克
  • 黄瓜1条
  • 李锦记泰式甜辣酱3汤匙
  • 料酒1汤匙
  • 生粉1/2汤匙
  • 胡椒粉1茶匙
  • 2茶匙
  • 25克
  • 鸡精1茶匙

Steps to make 三个步骤做出让人回味的经典黄瓜桶盘饰——泰酱鱼丁

  • 1.主材料备好。
  • 2.泰式甜辣酱备好,龙俐鱼洗净切成鱼丁,放入姜碎粒、料酒1汤匙、生粉1/2汤匙、胡椒粉1茶匙、盐1茶匙拌匀,腌制20分钟。
  • 3.黄瓜去皮切丁,黄红椒切成丁备好。
  • 4.锅内下油烧热,下鱼丁入过油,沥干油份待用。
  • 5.另锅下油爆香泰酱。
  • 6.倒入黄瓜、黄红椒粒翻炒片刻。
  • 7.倒入过了油的鱼丁,微炒片刻。
  • 8.撒入盐和鸡精炒匀即可。
  • 9.把做好黄瓜桶盘饰装入少量泰酱鱼丁放入盘子中,盘中盛入泰酱鱼丁即可上桌。
  • 10.黄瓜桶盘饰做法:取中间相同长短粗细两段黄瓜。
  • 11.利用适当的工具把中间捣空(不要把底部也掏空了)。
  • 12.用刀对称切出桶把。
  • 13.然后把多余的部分去掉。
  • 14.用牙签穿上桶把。
  • 15.可爱养眼的黄瓜桶就做出来了。
