Steps to make 苏式月饼

  • 1.月饼馅粉:低筋粉适量烤熟
  • 2.先准备馅:花生仁、黑芝麻、核桃仁分别烤熟
  • 3.馅料烤熟后,待凉后装入袋子碾碎。
  • 4.烤好的面粉,倒入细砂糖、花生油及水,用筷子搅拌均匀,揉成软硬程度合适的馅团。
  • 5.我做了两种馅,在原始馅里加了海苔及火腿肉
  • 6.油皮原料混合在一起,揉成水油面团。
  • 7.油酥原料混合在一起,揉成油酥面团
  • 8.两种面团分别盖上保鲜膜醒30分钟
  • 9.醒制好的油酥和水油面个分成12个小剂
  • 10.取一个水油剂子,擀成中间厚外薄的面皮,放上一个油酥,
  • 11.象包包子那样,把油酥包在里边。
  • 12.包好的剂子收口朝下,擀成牛舌状。
  • 13.从一头紧紧卷起。所有的剂子做好盖上保鲜膜醒15分钟。
  • 14.醒制好的剂子,再重复的步骤擀开-卷起
  • 15.所有的剂子依次做好,再醒制15分钟.
  • 16.取一只醒好的剂子,竖起按扁。
  • 17.擀成片,包入准备好馅团,收口朝下摆入烤盘中,轻轻按压 所有依次做好。

  • 19.将烤盘放入烤箱的中层,180度上下火烤10分钟,翻面,再入烤箱烤10分钟即可
