螃蟹月饼
这个螃蟹月饼是今年月饼界的新宠,得跟潮流走一回。馅料我用的是自制豆沙加上肉松混合成,咸甜味,不会甜腻,也可以换成你喜欢的馅料。

  • 广式月饼粉160g
  • 转化糖浆110g
  • 枧水3g
  • 花生油39g
  • 豆沙馅350g
  • 肉松100g

Steps to make 螃蟹月饼

  • 1.将转化糖浆、枧水和花生油倒入盆里,用手动打蛋器搅拌均匀,乳化好。
  • 2.倒入面粉。
  • 3.用刮刀拌成团即可,盖上保鲜膜,在室温下松驰2个小时。
  • 4.馅料拌匀,分成每个30克,搓圆备用。
  • 5.松驰后的饼皮分成每个20克,搓圆,盖上保鲜膜。
  • 6.将饼皮在左手手心上压扁,放上馅料。
  • 7.右手按着饼皮慢慢转圈向上推,与馅料紧粘,收口搓圆,再搓成椭圆形,方便入模。表面扑点玉米淀粉或者面粉防粘,拍去多余的粉。
  • 8.放入模具,向下按压,提起模具。
  • 9.月饼放在不粘烤盘上,在上方用喷壶喷水雾,让水雾自然落在月饼上。
  • 10.放入已经提前预热到180度的东菱K40C烤箱里,先烤5分钟定型。
  • 11.将月饼胚取出,用毛刷沾点蛋黄水,再刷在月饼表面,侧面不用刷。
  • 12.继续放入烤箱里,烘烤10分钟左右。烘烤结束,将月饼取出晾凉后放在密封盒里,室温保存到第二天回油再食用。
