腊八节来了,腊八节美食很多,其中我最爱腊八豆,每年的腊八节腌上几罐,放着慢慢吃,浓浓的自发酵香,吃粥,馒头,佐料炒菜、焖菜、炖菜都非常好吃。

Steps to make 腊八豆

  • 1.准备好食材:黄豆、生姜、干辣椒、盐等;
  • 2.黄豆洗净,浸泡6小时泡发,泡好的黄豆水煮熟;
  • 3.泡好的黄豆,捞出沥干水,放入锅中煮熟;
  • 4.煮好的黄豆沥干水水分,晾凉;
  • 5.放入干净无水容器中,静置,进行第一次发酵;
  • 6.至黄豆起涎发粘(葱豆子表面看得到)时第一次发酵完成;
  • 7.生姜去皮、洗净,切细末;辣椒碎;盐用锅炒出微黄;
  • 8.用一个大容器把发酵好的黄豆、生姜末、辣椒碎、盐拌均;
  • 9.罐子洗净沥干水,把拌均好的黄豆装入坛子中;
  • 10.罐口用保鲜膜密闭严实,盖紧盖子;豆子进行二次发酵,10-20天后开坛食用。
