自制早餐小油条
油条也称“馃子”。是我国传统早餐主食之一,家庭自制早餐油条操作简单(可在头天晚上和好面,放入冰箱冷藏6至8小时,早上取出回室温半小时、既可做型炸制)成品轻盈膨松,口感香酥。亦可与豆浆、豆腐脑配之食用。

  • 油条膨松剂6g
  • 小苏达2g
  • 泡打粉2g
  • 食用油适量(炸制)
  • 6g
  • 白糖5g
  • 食用油15g(和面中)

Steps to make 自制早餐小油条

  • 1.面粉及各种粉类放入盆中,再混合均匀。
  • 2.水中加入1个鸡蛋搅拌均匀。
  • 3.面中加入鸡蛋水搅拌成絮状,折叠成团后再加入15g食用油继续叠加。
  • 4.由四周往中间叠加搋面反复3次,每次中间再静置10分钟进行下一次叠加搋面。
  • 5.搋好的油条面用薄膜包好,放入冰箱冷藏6至8小时。
  • 6.6小时后取出饧发好的面室温回暖。
  • 7.打开薄膜。
  • 8.无需再揉面,直接擀成长条状。
  • 9.切成条状。
  • 10.再条之间抹水后重叠,压线成油条坯。
  • 11.由于锅中油放的不是太多,油面窄,又将油条切成了小油条坯。
  • 12.油温5成热左右将油条坯下入锅中炸制。
  • 13.胖胖的小油条颜色金黄很可爱,轻盈膨松、口感香酥、作为早餐很有食欲。
