Steps to make 菊花鱼

  • 1.鲈鱼去头,用刀把鱼肉取下
  • 2.取鱼肉时,不要让太多鱼肉留在鱼骨上,最后尾部切断彻底取下
  • 3.取另一半鱼肉
  • 4.两片鱼肉取完后,中间剩下部分的鱼骨清晰可见,说明鱼肉基本都已经取下
  • 5.切除鱼腹肉
  • 6.花刀切鱼肉
  • 7.取一小段鱼肉再竖切
  • 8.切完后鱼肉成菊花状
  • 9.把所有鱼肉都按上述方式切完后,用盐,鸡粉,料酒把鱼肉腌制5分钟,再加入鸡蛋清
  • 10.腌制完的鱼肉裹上干淀粉,每一处都要均匀地裹上干淀粉
  • 11.起油锅油炸鱼肉,炸熟取出装入盘中
  • 12.鱼肉炸完后把锅中油倒掉,在锅中倒入番茄汁,加盐和鸡粉调味,加水淀粉勾芡成浓稠酱汁
  • 13.将酱汁淋在炸好的鱼肉上,西兰花下水煮熟装饰即可
