经常遇到做生日蛋糕,开了一升的淡奶油用不完,然后放着放着最后倒掉的悲剧。尝试了这个焦糖奶油酱后,估计以后的淡奶油都不会再剩了。因为这个酱太好吃了,滑滑的,有太妃糖的味道,抹面包,做饼干超级方便。还在买炼奶来沾馒头吃吗,自己做这个酱就可以了,哈哈,更好吃~

Steps to make 焦糖奶油酱

  • 1.将125克粗砂糖用料理机打碎。
  • 2.锅里放入打碎了的砂糖和25克清水。
  • 3.小火加热至砂糖完全融化,开始冒泡,期间不需要搅拌。
  • 4.继续小火加热至糖水开始出现金黄色,这时可以轻轻晃动锅,使其均匀上色。
  • 5.这个时候另起一个锅将淡奶油煮沸腾,用中火,很快就沸腾了。
  • 6.糖水熬至深琥珀色的时候马上熄火,倒入煮沸腾了的淡奶油,用木铲搅拌均匀,然后把锅坐到冷水中去冷却,冷却的过程需要不停搅拌,直至焦糖酱平静下来。
  • 7.趁着还有温度,将焦糖酱装到消毒了的玻璃瓶里,完全冷却后盖好盖子放冰箱保鲜层保存。
