大盘鸡——新疆味道
大盘鸡是新疆的著名小吃,大盘鸡的火辣、热闹就象豪爽好客的新疆人。新疆大盘鸡起源于90年代初期,大盘鸡原创地在新疆的沙湾县,据说是一家清真饭馆做的。不过很快就流行开了,几乎家家户户都有人会做。十多年过去了,大盘鸡一直被人认可,经久不衰。新疆大盘鸡现在已成了家常菜,新疆人差不多都会做。又可以做主食又可以做菜,很受欢迎的。

  • 1.材料:新鲜三黄鸡 土豆 干红辣椒 八角 花椒 胡椒 香叶 草果 孜然 盐 大葱 姜 料酒 白糖 大蒜 桂皮
  • 2.三黄鸡洗净(我爱用三黄鸡),切成小块,土豆去皮切成块,大葱切成段,大蒜去皮 干红辣椒用凉水泡软
  • 3.白糖炒的起咖啡色的泡了,
  • 4.放进鸡块,
  • 5.翻炒均匀
  • 6.加入干红辣椒 八角 花椒 胡椒 香叶 草果 孜然 姜 料酒 白糖 大蒜 桂皮
  • 7.继续翻炒均匀,
  • 8.到鸡块有香味儿了成金黄色时,扔进土豆,加一点盐,炒均匀了
  • 9.就加水至淹没鸡块,大火烧开,
  • 10.加盖中火开始煮
  • 11.土豆煮至自己喜欢的软硬时,加入切好的葱段,加盐调味,稍微煮一下,就可以出锅了
  • 12.色泽红韵,鸡的香辣,土豆的绵 香辣美味
  • 13.皮带面的做法: 1 冷水和面,和面时看面粉的多少放一些盐,要稍微软一些 2 面和好后,切成条,上面放一层油 3 醒30分钟,拉成宽面,一边拉一边在桌面上敲打 4 开水下皮带面,捞起过凉开氺
  • 14.鸡吃到一半时,加皮带面,煮熟的皮带面非常有嚼劲,在鲜辣的鸡汁里一拌哪个美味啊,这后面的鸡汁拌面片是比前面的鸡肉还要好吃的。
