Steps to make 酸菜粉丝炒肉

  • 1.将肉切成丝
  • 2.肉里加入料酒和适量淀粉抓匀。
  • 3.取一小把粉丝用水泡软。
  • 4.酸菜洗净,挤去多余水分。
  • 5.辣椒切成椒圈,葱切末。
  • 6.锅内放油,六成热时放入葱花爆香。
  • 7.下肉丝划散。
  • 8.加入酸菜翻炒。
  • 9.加入适量生抽翻炒均匀。
  • 10.加入适量开水(有高汤更好),放适量盐,小火慢炖。(酸菜比较禁煮,越煮越入味,所以这步时间可以长一些,但水不要加太多,不然就变成炖酸菜了)
  • 11.酸菜入味后,加入粉丝,待粉丝熟后大火收汤。(汤稍多也不要紧,离火后粉丝会迅速吸去多余的汤)
  • 12.加入鸡精调味,撒上红椒圈。(加辣椒只是我的习惯,可以不放)
