芒果慕斯
芒果是一种深受人们喜爱的水果,富含糖分、膳食纤维、维生素、矿物质等多种营养物质。芒果除了美味以外对人体还有许多功效:
1、改善便秘,芒果中所富含的膳食纤维,一方面可以吸水膨胀软化粪便,另外一方面可以加强胃肠道蠕动、促进消化从而达到通便的效果;芒果虽然美味,且有很多的益处,但并非适宜所有人群,因为芒果含糖量非常高,所以对于糖尿病患者来讲就不适宜过量食用。如果食用,建议在两餐之间选用,每天不超过200g。此外,芒果比较容易致敏,过敏体质的人群慎食!

  • 吉利丁7.5g
  • 木糖醇20g
  • 原味酸奶100g
  • 淡奶油150g
  • 鸡蛋4个
  • 食用油30g
  • 低筋面粉40g
  • 玉米淀粉7g
  • 木糖醇40g
  • 牛奶38g
  • 抹茶粉6g
  • 吉利丁2.5g
  • 芒果泥40g

Steps to make 芒果慕斯

  • 1.蛋糕胚的所有材料准备好.蛋清蛋黄分开(分的时候注意哦,蛋清里面不要掉入蛋黄液了,不然影响后面蛋清打发)。
  • 2.木糖醇(没有可以用糖粉,我家都是木糖醇代替白糖的)加入蛋黄液中搅拌均匀。
  • 3.加入食用油继续搅拌均匀。
  • 4.抹茶粉倒入蛋黄糊中继续搅拌均匀。
  • 5.搅拌均匀后倒入牛奶(我用的是脱脂牛奶)继续搅拌均匀。
  • 6.然后玉米淀粉和低筋面粉混合过筛加入到蛋黄糊中翻拌均匀。
  • 7.像这样细腻顺滑的就可以放一边备用了,这个时候可以把烤箱上下火160度预热了。
  • 8.蛋清中加入柠檬汁或者是几滴白醋,倒入糖开始打发。
  • 9.打发到提起有倒三角的硬性发泡就可以了。
  • 10.先用一点蛋白霜加入到抹茶蛋糕糊里搅拌均匀。
  • 11.再倒回到多的蛋黄糊中继续搅拌均匀,注意要翻拌手法,动作要轻哦不然容易消泡。
  • 12.搅拌均匀后倒入铺上锡箔纸的烤盘上,轻轻震两下震出大气泡,放入提前预热好的烤箱烘烤20分分钟左右(看自己烤箱平时的操作吧)油纸最好,我的刚好用完了)我的烤盘大概是13寸(32*29)的。
  • 13.烤好后的蛋糕胚取出放凉后拿一个六寸的慕斯圈切出慕斯底(我做了两个,一个6寸方形的一个圆的渐变)方形的要切两片备用。
  • 14.芒果打成泥越细腻光滑越好过筛250克备用。
  • 15.加入提前泡好的吉利丁片隔热水让吉利丁片完全融化。
  • 16.奶油打到六成发加入酸奶搅拌均匀后倒入芒果糊中。
  • 17.然后搅拌均匀就出来慕斯馅了。
  • 18.倒在铺了抹茶蛋糕胚模具中放入冰箱冷冻差不多5分钟后取出,再放入一块抹茶蛋糕胚轻轻压一下,然后再倒满慕斯馅放入冰箱继续冷冻8分钟,利用这个时间可以做镜面。
  • 19.芒果泥中加入提前泡软的吉利丁片,隔水加热让吉利丁片完全融化后将冷冻好的蛋糕取出,慕斯镜面淋上快速的转开,(因为温度比较低不快速的话容易凝固就不好操作了)。
  • 20.像这样边边角角都要淋到,然后再放冰箱冷藏10分钟后取出,用吹风机或者是热毛巾敷模具一会,让其好脱模了。
  • 21.脱模后的蛋糕,然后再放冷藏2-4个小时就可以吃了。
  • 22.这个是六寸的抹茶渐变。
  • 23.冷藏4个小时后美味的抹茶芒果慕斯就可以开吃了。
