  • 细砂糖8g(涂抹模具)

Steps to make 舒芙蕾

  • 1.牛奶倒入碗里;
  • 2.将低筋面粉筛入牛奶中,搅拌融化至没有疙瘩为止;
  • 3.过滤到奶锅中;
  • 4.将黄油、8g细砂糖也倒入奶锅中,小火加热并不停搅拌煮至糊状有纹路了就停火,放在一边晾凉;
  • 5.将黄油均匀的涂抹在模具底部和四周;
  • 6.之后撒上白砂糖让模具内壁沾上一层,倒出多余细砂糖,这是为了使蛋糕不沾模子,能更好的蓬松起来;
  • 7.将蛋黄蛋白分离;
  • 8.蛋黄加入到已经凉下来的牛奶糊中,搅拌均匀;
  • 9.把剩下的8克细砂糖分三次放入蛋白中,并用电动打蛋器打发至干性发泡;
  • 10.将三分之一蛋白跟蛋黄牛奶糊翻拌均匀;
  • 11.再全部倒回剩下的蛋白中翻拌均匀;
  • 12.将搅拌好的面糊倒入模具中至八-九分满,并磕出气泡;
  • 13.放入预热好的烤箱内180度烤20分钟;
  • 14.出炉筛上糖粉即可;
  • 15.成品。
