喜迎中秋佳节,自己动手做月饼——【苏式凤梨月饼】
苏式月饼是我国的传统食品,它的特点就是“酥”!吃起来又酥又香,尤其是自己在家做的苏式月饼,更是受到家人的喜欢。

自己在家做月饼不用担心馅料是不是健康,加没加加防腐剂。我用的馅料都是自己做的,吃起来肯定即健康又好吃。就是炒制馅料的过程挺累的,如果当天做完馅料直接做月饼的话,恐怕要忙一天啊。所以我都是提前一天将馅料制作出来,第二天做。

  • 1.水油皮的制作。面粉称重后依次加入猪油。
  • 2.加水搅拌均匀。
  • 3.揉成一个光滑的面团,放置一旁盖上保鲜膜醒发30分钟。
  • 4.油酥面的制作。低粉称重后加入猪油搅拌均匀
  • 5.揉成团。
  • 6.放置一旁盖保鲜膜醒发30分钟。
  • 7.将醒发好的水油面和油酥面分别分成8等分。
  • 8.取其中一份水油面面团擀成圆形,将其中一份油酥面团放到水油皮面皮的中间。
  • 9.用水油皮面皮包住油酥面团,收口朝上。 剩下的面团依次做好后盖上保鲜膜醒发15分钟。
  • 10.取其中一块面团用擀面杖擀成椭圆形。
  • 11.卷成长条状,光滑的一面朝下。
  • 12.然后用擀面杖擀成长方形。
  • 13.再卷起来,光滑的一面也要朝下,一定不要忘了。这样考出来的月饼表面是比较光滑的。
  • 14.用擀面杖在中间压一下。
  • 15.两头合拢。
  • 16.整理成一个光滑的小面团。
  • 17.光滑的一面同样朝下,用擀面杖擀成圆形并放入馅料。包好。
  • 18.收口朝下,放入铺了油布的烤盘上。
  • 19.刷上一层蛋黄液。
  • 20.放入预热好的烤箱里,210度,中层,烤25分钟左右。 时间请根据自家烤箱灵活掌握。原配方是200度,烤25分钟。我家的烤箱不给力,我调到210度考了25分钟。
  • 21.烤制7分钟左右,再刷一层蛋黄液。这样考出来的月饼卖相会更好。上色后加盖锡纸,一共烤制25分钟。月饼烤制表面金黄,香味四溢就可以出炉了。烤好的月饼取出后稍微凉一下就可以吃了。趁热吃才好吃呢!
