三杯鸭
传统的三杯,油太多了,现在的人主重健康,今天我也做一份没有三杯的三杯鸭,味道也是杠杠的。

  • 金不换适量(九层塔)
  • 八角少许
  • 桂皮少许
  • 香叶少许
  • 少许
  • 辣豆瓣酱一勺
  • 料酒少许
  • 白醋少许

Steps to make 三杯鸭

  • 1.新鲜鸭肉斩件备用。
  • 2.备:姜片,辣豆瓣酱,八角,桂皮,香叶。
  • 3.金不换也叫九层塔。
  • 4.鸭肉放入开水锅中加料酒,白醋焯水。
  • 5.捞出来清洗干净沥水备用。
  • 6.热锅放油,放入姜片和香料小火炒香。
  • 7.放入鸭肉大火翻炒,米酒从锅边淋入去腥增香。
  • 8.加入酱油。
  • 9.加入糖。
  • 10.翻炒均匀。
  • 11.放入辣豆瓣酱。
  • 12.加入与食材差不多平面的开水。
  • 13.盖上盖子中火烧开再调小火继续焖煮40分钟左右(煮至自己喜欢的软烂度)。
  • 14.时间差不多了打开盖子翻炒均匀,收下汤汁。
  • 15.最后放入金不换翻炒均匀。
  • 16.色泽很好,味道更香,关火完成了。
