【蔓越莓蛋糕卷】
蔓越莓是我的最爱之一,本来这个方子是葡萄干蛋糕卷,因为不喜欢吃烤出来的葡萄干的味道,所以自己演变了一下更改了一下方子,然后这款蔓越莓蛋糕卷就出品了,非常好的口感非常细腻的组织,儿子上学之前都要打包几块带走呢!

  • 鸡蛋5个
  • 白砂糖80克
  • 白醋几滴
  • 低筋粉85克
  • 蔓越莓干35克

Steps to make 【蔓越莓蛋糕卷】

  • 1.分离蛋清和蛋黄,将蛋黄盆里面加入白砂糖
  • 2.用手动打蛋器搅拌均匀后加入50克水并搅拌均匀
  • 3.加入50克色拉油并搅拌均匀
  • 4.筛入低粉用刮刀翻拌均匀无颗粒
  • 5.搅拌均匀后的样子
  • 6.蛋清要放在无油无水的干净盆里加入几滴白醋
  • 7.用电动打蛋器将蛋清打发至9分发
  • 8.取少许的蛋清放入蛋黄中
  • 9.翻拌均匀
  • 10.再倒回到蛋清中
  • 11.上下翻拌均匀
  • 12.烤盘铺油纸后撒上泡过的蔓越莓干
  • 13.将蛋糊倒到烤盘上,倒干净后表面刮平后再撒上剩余的蔓越莓干
  • 14.放入预热好的烤箱烤制,下层130度30分钟烤至表面发黄摁下有弹性即可
  • 15.烤好的蛋糕倒放入面板上(提前铺上油纸最好)
  • 16.撕去油纸
  • 17.翻面后抹上果酱
  • 18.卷起来后静止10分钟
  • 19.定型后的蛋卷用面包刀切开(大小随意)
