麻辣小龙虾
麻辣小龙虾在家做一样爽,只不过少了大排档独有的那种的气氛,但是在家做干净、卫生也是大排档不能比的,自从在家自己实验成功,已经很久没有在外面吃小龙虾啦~想吃了就自己做,经济又健康,少吃了很多地沟油,O(∩_∩)O哈哈~

Steps to make 麻辣小龙虾

  • 1.小龙虾买回来后放入桶中养2个小时以上,水中滴几滴香油,有助于龙虾吐出脏东西,中间用筷子搅拌几次,会看到水变脏,多换几次水,将龙虾充分洗净,用手拉住龙虾尾巴的中间那片尾甲,抽出虾肠。
  • 2.准备配料:洋葱切粗丝,蒜拍扁,尖椒切1厘米左右的辣椒圈,洋葱、蒜和尖椒放在一个盘子里;青椒切块,芹菜摘去叶片切段和青椒放一个盘子里,小米椒适量。
  • 3.郫县豆瓣剁细备用。
  • 4.锅中坐油,油温5成热放入适量花椒,炸制片刻后捞出花椒粒。
  • 5.倒入大蒜,洋葱、尖椒炒出香味。
  • 6.放入豆瓣酱炒出红油。
  • 7.放入小龙虾翻炒一会,调入适量料酒和老抽继续翻炒片刻。
  • 8.加入清水至刚好没过小龙虾,水开后改中火焖烧。
  • 9.焖烧一会后剪入小米椒圈圈,这个要按照个人的辣阈适量添加(一根小米辣就可以很辣)。
  • 10.汤汁烧至剩三分之一时放入青椒和芹菜烧制一会至青椒断生。
  • 11.大火收汁,调入适 量的盐、糖,少许味精提味即可,把龙虾在汤汁中浸泡一会味道更佳~
