果仁草莓干牛轧糖
春节说来就来了,虽然提倡就地过节,但家门口的亲朋好友还是要走动一下的。喝茶嗑瓜子是传统的待客之道,做点网红牛轧糖,好看好吃,还多了聊天的话题。

熬糖版的牛轧糖费事又不能保证成功率,所以咱就用棉花糖做个快手的。因为食用量不多,所以不要太过分纠结棉花糖是不是属于健康食品范畴了,选用大品牌的棉花糖还是挺让人放心的。

今天先分享最简单的原味草莓干果仁牛轧糖,后续还会分享几道牛轧糖。

  • 棉花糖150克
  • 黄油22克
  • 全脂奶粉85克
  • 冻干草莓脆50克
  • 混合果仁120克
  • 1.5克

Steps to make 果仁草莓干牛轧糖

  • 1.材料大合影:原味棉花糖、冻干草莓脆、全脂奶粉、少许盐,混合果仁。
  • 2.不粘炒锅小火加热,将黄油入锅融化。
  • 3.棉花糖倒入锅中,小火加热融化;我用的电磁炉,全程火力在100-300瓦之间调整。
  • 4.不时用耐高温硅胶刮刀搅拌,使棉花糖均匀受热融化,直到全部变成糖浆状。
  • 5.将奶粉和盐混合后倒入糖浆中,迅速搅拌混合。
  • 6.奶粉与糖浆完全融合在一起,不粘锅里非常干净。
  • 7.关火,将冻干草莓脆、混合果仁全部倒入糖浆中。
  • 8.用刮刀将材料大致混合成团。
  • 9.用双手将材料揉成团,尽量将固体的食材全部包裹在糖团中;糖团很热,需要快速揉合。
  • 10.牛轧糖模具中提前撒少许奶粉,将糖团放在模具中,表面擀平,再把边缘处用擀面杖整形,温热或者凉后脱模。
  • 11.将定型且放凉的糖团脱模,底部有切割线。
  • 12.用利刀沿着切割线先切条、再切块,用糖纸包裹或者直接入袋、入盒保存。
