【少油版】地三鲜 (北方家常菜)

Steps to make 【少油版】地三鲜 (北方家常菜)

  • 1.准备好材料。
  • 2.土豆去皮后切小块,冲洗下。(不要切太大,不易熟)
  • 3.青椒洗净后去籽也切成块状;蒜切末。
  • 4.茄子洗净切块后,加入少许盐提前腌渍一下。
  • 5.调些许的水淀粉备用。
  • 6.锅内倒少许油,放入土豆,用中小火煎。
  • 7.煎成表面金黄脆皮,即可乘出。
  • 8.锅内留余油,把青椒块也放入煎到表面稍稍变焦,乘出。
  • 9.余油,将腌渍过的茄子挤下水分后,放入锅内,小火煎软煎透,乘出。
  • 10.锅内重新放入少许油,把蒜末爆香。
  • 11.开大火,将煎过的三种食材一起放入锅内翻炒会,再加入料酒1勺,生抽1勺,少许盐,鸡精,白糖少许,少许热水,翻炒均匀。
  • 12.最后,将调后的水淀粉沿着锅边倒入,大火收汁即可。
  • 13.腌渍过的茄子,在炒至过程中不易吸油和粘锅。
