奥尔良鸡肉披萨

Steps to make 奥尔良鸡肉披萨

  • 1.饼坯材料好
  • 2.饼坯材料除黄油外,全部入盆中
  • 3.揉成一个略微光滑的面团后,将软化的黄油入其中
  • 4.揉成一个光滑的面团,盖保鲜膜,于温暖湿润处进行基础发酵
  • 5.面团发酵时,可以来处理一下鸡肉。两块鸡胸脯肉去除筋膜,清洗干净
  • 6.切成2厘米见方的肉丁
  • 7.根据口味倒入新奥尔良烤肉料
  • 8.与肉块充分混合均匀,放一旁腌半小时左右
  • 9.待面团发至原来的2.5倍左右时,用手指蘸面粉,在顶部戳个洞,不回缩不塌陷,发酵成功
  • 10.将面团取出,置于垫子上,排气揉圆,根据使用的烤盘分成两个面团,揉圆后松弛10分钟再用
  • 11.利用面团松弛的时间将腌好的鸡肉块入炒锅中炒熟,尽量不留水分在里面
  • 12.取一块面团,将其擀成比8寸盘大点的饼皮,用垫子正好可以做衡量标准
  • 13.将饼皮放到8寸烤盘中,边缘略高些,中间用餐叉扎出均匀的洞洞,利于烤时排气不变形
  • 14.入预热好的烤箱中层,180度,上下火,10分钟
  • 15.烤披萨饼皮时,将秋葵洗净,沥干水,切成小圈,备用
  • 16.将烤好的饼坯从烤箱中取出
  • 17.17. 先均匀地抹上一层番茄酱
  • 18.再依次铺撒上马苏里拉奶酪、鸡肉块、秋葵圈
  • 19.最后再在表面撒一层马苏里拉奶酪
  • 20.入烤箱中层,180度上下火,12分钟左右,
  • 21.奶酪表面融化呈略微金黄色,可出炉
  • 22.饼底又焦又酥又暄软,鸡肉入味微辣,口感极好
