无论是家常菜,还是摆酒席,还是下馆子~~口水鸡的出镜率都杠杠的~
作为一道集麻辣鲜香嫩爽与一身的的口水鸡~~颜值和内涵都是有的~
最最最重要的是做法其实很简单~~~
鸡肉不要煮老,用冰水激一下,调碗美味的料汁~~就能收获一顿美味~~~

Details of ingredients

  • 土鸡1/4只
  • 老姜4片
  • 大葱2段
  • 大蒜6瓣
  • 小葱2颗
  • 料酒5毫升
  • 生抽15毫升
  • 1小勺
  • 香醋10毫升
  • 油泼辣子1大勺
  • 香油1小勺
  • 藤椒油1小勺
  • 白芝麻1小勺
  • 白糖1小勺

Steps to make 【四川】香辣口水鸡

  • 1.备好食材:土鸡,姜片,大葱段;土鸡用清水浸泡片刻,去除血水后,洗净;
  • 2.煮锅里加入适量清水,放入土鸡,2片姜片,大葱段,料酒,大火煮开后再用中火煮15分钟,然后关火焖10分钟;
  • 3.煮鸡肉的同时,可以先处理姜蒜:剩余的姜片同大蒜一起剁碎后,调入适量凉白开,搅拌均匀后静置片刻;姜蒜水可做点,放冰箱冷藏可保存2—3天,做凉菜很方便;
  • 4.煮好的鸡肉用冰水冰10分钟左右;
  • 5.取一个碗,调入适量生抽,盐,香醋,油泼辣子,香油,藤椒油,白芝麻,白糖,适量姜蒜水搅拌均匀;小葱洗净切葱花备用;
  • 6.晾凉后的鸡肉斩块,码在盘子里;
  • 7.淋上调理汁,撒上葱花;
