家常卤牛肉
每次吃的卤牛肉都是外面买的,总感觉有点咸。今天自己做的卤牛肉,味道浓郁、咸淡适合、肉质软烂。

  • 牛肉1000g
  • 大葱1颗
  • 生姜1块
  • 生抽2勺
  • 老抽1勺
  • 一勺
  • 花椒粒1勺
  • 八角2颗
  • 桂皮2块
  • 草果1个
  • 茴香1勺
  • 丁香4颗
  • 陈皮1块
  • 冰糖5颗
  • 料酒1勺
  • 香叶3片

Steps to make 家常卤牛肉

  • 1.准备一块牛肉,用清水浸泡3个小时左右,中间换两次水。
  • 2.准备辅料。
  • 3.浸泡好的牛肉用清水洗干净切成差不多大块。
  • 4.锅中加水,将牛肉放进去,里面加料酒、姜片和大葱段。
  • 5.水开后将上面的浮沫,煮10分钟左右后捞出。
  • 6.用凉水冲洗干净。
  • 7.准备冰糖。
  • 8.取一小碗,里面加盐、生抽和老抽调个料汁。
  • 9.将剩下的调料用纱布包起来做个。
  • 10.将牛肉放进锅里,里面加适量开水,再将所有调料、料汁、大葱段和姜片放进去中小火慢炖1.30小时关火。
  • 11.关火。
  • 12.牛肉捞到大碗里,将汤汁浇在牛肉上面,浸泡一晚上。
  • 13.早上起来将在汤汁泡了一晚上的牛肉捞出来。
  • 14.切成自己喜欢的块或者片。
  • 15.成品图,肉质软烂,味道鲜美。
