炸麻叶
传统年味零食——炸麻叶。

  • 面粉300克
  • 鸡蛋1个
  • 黑芝麻15克
  • 食用油20克
  • 温水100克

Steps to make 炸麻叶

  • 1.材:面粉300克、鸡蛋1个、食用油20克、黑芝麻15克、五香粉适量、食盐适量、水(80——100克)。
  • 2.面粉中加入鸡蛋,黑芝麻、五香粉、再加入食用油20g左右,盐1小勺拨成絮状。(炸麻叶加入鸡蛋和植物油,会让炸好的麻叶更酥脆)。
  • 3.拨成絮状后慢慢加水揉匀。
  • 4.揉好的面团要很硬,和擀面一样,一定不要软了,包上保鲜膜松弛2小时。(面团硬一些才能擀的更薄,炸出来更酥脆)。
  • 5.松弛好的面团再次揉光滑。
  • 6.用擀面杖擀成厚薄为1毫米左右的大薄面片,越薄越好。
  • 7.擀好的薄面皮顺着切成6厘米宽的长条。
  • 8.取一条面皮对折,切成如图所示的样子。(切三刀,第四刀断开)。
  • 9.取两片叠在一起,从一端提起,穿过中间的划口。
  • 10.穿过后轻拉,整理好即可,所有面团都做好即成生坯。
  • 11.也可以直接用刀划开,切成柳叶形或菱形。
  • 12.油六成热,放入麻叶生坯,中小火炸制。
  • 13.待麻叶炸至飘起时,两面金黄,捞起控油即可。
  • 14.成品。
