河南风味---水煎包
河南风味的水煎包,很奇怪吧,我们那边的水煎包是开口的,呵,我给它取个名字叫开口笑。记得小时候很喜欢吃这个,爷爷每次去集市回来都会给我们带水煎包和豌豆凉粉,后来我妈嫌集市上买的全是皮没有馅,就自己发面调馅给我们煎,超级美味啊!那时候每次早餐问我们想吃什么,不约而同的回答水煎包,水煎包配胡辣汤,地道的河南风味早餐。

    Steps to make 河南风味---水煎包

    • 1.将酵母粉和温水混合搅拌,倒入盆中和面,不停的揉搓直至和成光滑的面团,然后盖上保鲜膜,置于温暖处发酵至原来体积的两倍大小。
    • 2.放到案板上揉匀揉透;
    • 3.用刀切成段;
    • 4.搓成长条;
    • 5.分成大小均匀的剂子;
    • 6.准备好馅料(之前包饺子剩下的,所以没有详细说);
    • 7.用手捏成圆片,大约是饺子皮大小,比饺子皮厚一些;
    • 8.包入馅料;
    • 9.捏成半月状,两边稍微收口即可;
    • 10.锅内放入适量花生油;
    • 11.油热后将包子整齐地码入锅内;
    • 12.准备半碗清水,放入少量面粉搅拌均匀,倒入锅中,盖上锅盖煎制;
    • 13.等到水收干,就可以关火了;
    • 14.开盖用锅铲将薄皮一划为四,再连包子铲起,包底朝上,底部呈金黄色时即熟;
    • 15.装入盘内,即可食用。
