说什么好呢?这个蛋糕。原是拿来做裱花的戚风。底朝天趴在烤盘中,中央略微凹陷。塌了?但似也并不太明显。翻面,一惊,裂得入花儿绽放。及至横剖一刀,瞠目。暗道,不应该呀?即使是新手也很少能把所有毛病都占全了:中央凹陷,表面开裂,个别微小的面粉疙瘩,而最致命的是,中心湿润并散发出明显的蛋腥味——夹生!?而夹生正好可以解释中央那些微的凹陷。
无语,也只能照单收下。如何处置?重新回炉?很快就有了主意。待到空闲,再来慢慢地让它变成另一种蛋糕——薄薄的蛋糕干。
剖成两半的蛋糕继续剖成1-1.5厘米的薄片,再大卸八块,放入烤箱,低温烘干烘透。不再有蛋腥味,不再松软,而变得如饼干一样酥脆,却又入口即化,密封起来还可以多存些时日。
