  • 砂糖(蛋奶浆用)40克
  • 砂糖(焦糖用)60克
  • 清水(焦糖用)60克

Steps to make 焦糖布丁

  • 1.牛奶加入细砂糖,搅拌均匀
  • 2.小火煮至砂糖融化,牛奶略冒小泡即可,晾凉备用
  • 3.鸡蛋3个,准备好
  • 4.打蛋器搅打均匀
  • 5.牛奶彻底晾凉后,倒入蛋液中,搅打均匀
  • 6.蛋奶浆过筛一次,去除杂质
  • 7.60克砂糖和清水混合好
  • 8.小火熬至焦糖色
  • 9.焦糖趁热倒入模具底部,入冰箱冷藏室待焦糖凝固
  • 10.将蛋奶浆倒入模具中,约8分满
  • 11.烤盘内放清水,模具坐烤盘里,160度,上下火,中层,45分钟左右
  • 12.出炉的布丁蒙上保鲜膜,入冰箱冷藏室4小时定型
  • 13.小刀轻轻脱模,倒扣于小碟中,直接食用或者配上水果食用均可
