芋儿米粉蒸肉
粉蒸肉是一种传统的名菜,它以糯而清香,酥而爽口,软、嫩、甜、香、咸,滋味丰富,食性温和。以主料带皮花肉加稻米和其他调味料制作而成。“粉蒸肉”有肥有瘦,红白相间,嫩而不糜,肥而不腻,米粉油润,五香味浓郁。如以芋头垫底,粉糯清香,更为诱人。

Steps to make 芋儿米粉蒸肉

  • 1.原料图
  • 2.将芋头洗净削皮后切片后放少许的盐备用
  • 3.将猪肉(可以用五花肉,瘦肉都可)也切成薄片
  • 4.将葱切碎放进肉片上,加上盐、酱油,胡椒粉拌匀
  • 5.再加上一些醪糟水去腥提香(没有可用黄酒或料酒代替)
  • 6.再次搅拌均匀
  • 7.最后将米粉放入(米粉的量可根据肉的量来决定,肉片上粘满即可)
  • 8.用筷子搅拌均匀(米粉粘得也均匀)
  • 9.将拌好的米粉肉倒进装芋片的容器里(容器要稍微大一些)
  • 10.用筷子将肉片摆放均匀(利于受热均匀
  • 11.然后将蒸碗放进蒸锅里(我用的是电压力锅,这样蒸得快一些,也容易蒸熟蒸透)
  • 12.蒸上一个小时就可以了
