美味腊八豆
腊八豆是南方传统的食品之一。传统腊八豆,是将煮熟的大豆放在密封的容器中,利用自然界中存在的微生物发酵腌制出来的。在有益菌的作用下,转化为了另外一种形式的食品。黄豆经过腌渍发酵后,蛋白质分解,氨基酸增加,风味独特,更容易消化吸收。

    制作腊八豆的豆子的蒸煮要适度,不可太硬也不可太烂。前期发酵的温度和时间要随环境温度变化而定;后期发酵的控制时间一般是10-20天,经过这样制作的腊八豆才能突出它应有的风味。

Steps to make 美味腊八豆

  • 1.准备好干黄豆。
  • 2.准备好调料。
  • 3.黄豆提前泡发。
  • 4.泡好的黄豆入水煮熟。
  • 5.煮好的黄豆沥干水分、晾凉。
  • 6.放入干净无水容器中,静置,进行第一次发酵。
  • 7.至黄豆起涎;第一次发酵完成。
  • 8.生姜去皮、洗净、切细末。
  • 9.切好的生姜倒入豆子中。
  • 10.加入食盐、辣椒碎、生姜
  • 11.再加入腊水(腊月的水烧开摊凉)。
  • 12.充分拌和均匀。
  • 13.装入荷叶坛子中。
  • 14.坛口密闭严实;坛边倒上水以保持密不透风。拌好的豆子进行二次发酵,10-20天后可开坛子食用。
