彩虹冰皮月饼
受首页活动的鼓舞,要来做做创意月饼了,一直更偏向于喜欢冰皮月饼的口感,QQ的,不会太油腻,颜色也更加鲜亮柔和,自己做月饼的中秋节才更有气氛哦~健康无添加~~~我的中秋我做主~~我的月饼听我的~~

这次做了彩虹月饼,是不是有种水外洞天的惊喜感呢,色彩总会给人们带来愉悦的心情,必然能带来更加棒的食欲哦~~

造型的创意源于之前跟着大家做过的彩虹蛋糕,不过彩虹的月饼应该也可以算是我的创意吧~嘻嘻~~~看看我怎么做出好看又好吃的彩色月饼馅儿吧~~

  • 牛奶140g
  • 35g(馅儿)
  • 糯米粉50g
  • 粘米粉35g
  • 淀粉18g(馅儿)
  • 黄油18g
  • 鸡蛋1个
  • 奶粉35g
  • 温水35g

Steps to make 彩虹冰皮月饼

  • 1.140g牛奶,25g糖混合,加糯米粉50g、粘米粉35g和20g淀粉,拌匀成稀面糊(最好再加点色拉油或者白油,再加点炼奶)
  • 2.隔水加热
  • 3.用筷子搅拌至黏稠后关锅盖再蒸10分钟
  • 4.关锅盖再蒸10分钟,室温下放凉
  • 5.放凉面团期间做馅儿:黄油18g 室温软化后打散分两次加35g糖,打至松发。
  • 6.将1个鸡蛋打散,分三次加入,每次加入后搅拌均匀。
  • 7.将奶粉35g 温水35g 淀粉18g与适量芝士粉拌匀,倒入与蛋黄糊搅拌均匀
  • 8.搅好的蛋黄面糊隔水加热,小火蒸,间隔一段时间要注意搅拌,直到蛋黄面糊结成类似小疙瘩粘稠状关火
  • 9.用勺子按压,使奶黄馅更加细腻
  • 10.紫薯切片,隔水加热
  • 11.放入保鲜袋,加5%白糖,压成泥,拌匀
  • 12.奶黄馅儿均分为5等分,其中4个分别加适量抹茶粉,可可粉,草莓粉,紫薯泥揉匀;
  • 13.揉匀后的馅儿团加上未加粉的馅儿团一共得到五种颜色的馅儿团
  • 14.各色馅儿团各取5g压扁叠加;
  • 15.面团放凉后,带塑料手套将其揉成团。
  • 16.取20g冰皮面团压扁,放入馅儿
  • 17.收口处再用7g的冰皮面团包合
  • 18.揉成球体
  • 19.在炒熟的糯米粉中滚一圈
  • 20.用月饼模压形
  • 21.冷藏2小时以上即可
