超级下饭菜----【小炒肉】
小时候,在农村里,几乎每家每户都会自己养猪,谁家要是宰杀的话,就会请隔壁邻居和村里要好的人家来吃“杀猪饭”,大人小孩一大群,围着锅台转,就像是办喜事一般,很是热闹。杀猪饭一般会炒猪心、炒猪肝、烧猪血等,最不会少的一道菜就是“小炒肉”,这些都是妈妈的拿手好菜,清楚的记得妈妈的那个大锅铲在农村的大铁锅里挥舞的样子。

小炒肉是大人们的下酒好菜,也是我们小孩子的下饭好菜,即便到最后盘子空空的时候,只要把盘子里的汤汁往米饭里一倒,拌一拌,也能美美的吃上一大碗。

虽然我们家的人都不爱吃肥肉,但特别喜欢吃这样的小炒肉,每次都会吃得光光。做饭的过程中,为了综合大家的口味,所以做法在妈妈的基础上已经慢慢改变了,变成了大家都喜欢的那个味道。

  • 五花肉一块
  • 青椒2个
  • 红椒2个
  • 青蒜1根
  • 蒜瓣3个
  • 生姜3片
  • 食盐1茶勺
  • 生抽1汤勺
  • 老抽1汤勺
  • 料酒1/3汤勺
  • 香醋1/3汤勺
  • 白糖1茶勺
  • 老干妈1汤勺

Steps to make 超级下饭菜----【小炒肉】

  • 1.准备好原料。
  • 2.五花肉洗净,切成均匀的薄片。
  • 3.青、红椒洗净切成丝,青蒜切成段,生姜切丝,蒜切片。
  • 4.锅里加入少量油烧热,下入姜丝煸出香味。
  • 5.下入切好的五花肉片。
  • 6.中火翻炒至五花肉出油,表面金黄。(这时候锅里油比开始要多,可以盛出一部分)
  • 7.调入老抽翻炒上色,盛出备用。
  • 8.锅中留余油,转大火,下入青、红椒丝翻炒几下.
  • 9.加入蒜片、泡椒、五花肉翻炒均匀,调入上述中除了老抽以外的所有调料,翻炒均匀。
  • 10.下入切好的青蒜段。
  • 11.再次翻炒均匀即可出锅。
  • 12.很下饭的菜菜。
