豹纹蛋糕卷

  • 细砂糖50克
  • 柠檬汁数滴
  • 可可粉少许
  • 竹炭粉少许
  • 巧克力40克
  • 淡奶油100克
  • 细砂糖10克

Steps to make 豹纹蛋糕卷

  • 1.蛋黄加入10克糖打匀
  • 2.加入玉米油和牛奶打匀
  • 3.筛入低粉切拌均匀
  • 4.蛋白液中加几滴柠檬汁,打至粗泡,分三次加入40克砂糖,打至湿性偏干状态
  • 5.挖一勺蛋黄液加入少量可可粉,加入蛋黄液三倍左右的蛋白切拌均匀。同样的方法加入竹炭粉拌匀。分别装入一次性挤花袋,剪一个小口子,在铺好油纸的烤盘上挤上豹纹图案。入提前预热180度烤箱烤1分钟后取出
  • 6.余下的可可糊倒入蛋黄糊中拌匀后,将三分之一的蛋白糊倒入可可蛋黄糊中拌匀,再直接倒入剩余的蛋白中切伴拌匀后倒入烤盘
  • 7.震出气泡入预热180度烤箱,中层14分钟,烤好后趁热撕掉油纸,放凉备用
  • 8.放凉时把巧克力切碎,淡奶油加10克糖打到硬性。蛋糕有图案的一面放在油纸上,抹上奶油撒上巧克力碎
  • 9.用油纸卷紧入冰箱冷藏30分钟后切开即可
