家常担担面
担担面是四川民间极为普遍的特色传统小吃,做好的面条色泽红亮,麻酱的香和高汤、红油、肉臊交融在一起,麻辣酸,鲜而不腻,辣而不燥。
对我这个无辣不欢的人来说,一碗担担面还是很过瘾的。

  • 金龙鱼优+活性发酵空心挂面500克

  • 花椒粉2克

  • 芝麻酱15克
  • 生抽30克

Steps to make 家常担担面

  • 1.食材准备
  • 2.大骨买的时候让给剁几下,冷水下锅煮沸几分钟去除血沫子,捞出后用热水冲洗干净,然后放入温水,放两片生姜,中大火煮开后小火熬汤。
  • 3.猪肉切成小块,和生姜一起放入料理机中绞成小丁。

  • 5.炒锅烧油,凉油下八角炸出香味,油温热起来后下肉丁翻炒。
  • 6.炒干水后调生抽、老抽继续炒。
  • 7.炒出肥肉里的油,肉熟盛出,即为拌面的肉臊子,是偏干香的。
  • 8.花生放在厚铁锅里焙干或者放在空气炸锅里烤熟,晾凉后用擀面杖压碎,香葱切碎备用。
  • 9.汤锅烧开,煮金龙鱼优+活性发酵空心挂面。
  • 10.碗里放酱油(生抽老抽混合),醋、一点芝麻酱,花椒粉、舀入熬好的猪大骨汤,放香葱,调上红油。
  • 11.煮好的面条捞干放进调好的料汁里,码上烫好的青菜,放上花生碎,舀几勺炒好的臊子,撒上点香葱。
