凉拌麻辣真鳕北极贝

应应景,我来个中餐合璧的圣诞美食——凉拌麻辣真鳕北极贝。这道凉菜兼顾营养和美味。从食材上看,中外结合;从造型上,我整了个简单的圣诞花环。口感是极好的!连我那“有嘛吃嘛”、对食物一向不挑剔的老妈都赞不绝口。

Steps to make 凉拌麻辣真鳕北极贝

  • 1.北极真鳕和北极贝提前从冷冻室取出,室温下解冻后使用;
  • 2.莴笋、黄瓜、胡萝卜准备好;
  • 3.莴笋和胡萝卜刮皮,冲洗干净;黄瓜表皮用盐轻轻搓揉,冲洗干净;
  • 4.莴笋用擦丝器擦粗丝;
  • 5.黄瓜擦粗丝,中间易出汁的芯就不要擦进来了;
  • 6.胡萝卜也是生吃,所以可根据个人的喜欢擦粗丝或者细丝;
  • 7.大蒜剁碎;
  • 8.加生抽、米醋、白糖、盐同拌;因为有醋的介入,即使腌的时间稍长一会儿,食材也是脆脆的;
  • 9.真鳕鱼腹内的黑腹用刀刃刮掉,入盘、入开水蒸锅,蒸5分钟出锅,晾至手温;
  • 10.蒸鱼时处理一下北极贝:北极贝是经过清理后煮熟后速冻的,可直接食用;也可再清理一下,即用刀刃将贝一分两半,刮掉上面粘稠的物质;
  • 11.想要北极贝口感鲜嫩,用纯净水冲洗干净即可食用;想吃口感稍韧的,可入开水锅焯烫5秒捞出,千万不要久煮;
  • 12.晾至温热的鱼肉用餐叉分小块,鱼刺可轻松去掉;
  • 13.在拌菜中倒入适量麻辣红油,买的成品或者自制的均可;
  • 14.拌匀后将菜夹入到一张大盘子里,围成一个圣诞花环状;
  • 15.将真鳕鱼块和北极贝倒在腌料汁里,浸泡3分钟;
  • 16.真鳕鱼块和北极贝错落有致地码放在菜料上,再撒少许青蒜末增色添香,剩下的腌料汁倒在盘中即可食用。
