终于自己也能在家做莲蓉蛋黄月饼了,第一次知道鸭蛋黄馅的月饼的时候还是在几年前一个远方的姥爷送的,只从那时候起就非常的喜欢这个味的月饼,这几年每次中秋都是买着吃的,但接触烘焙以后今年就想动手做次试试。。

  • 吉士粉5g
  • 转化糖浆70g
  • 碱水1g
  • 花生油25g
  • 莲蓉750g
  • 咸蛋黄10个

Steps to make 莲蓉蛋黄月饼

  • 1.备好材料。
  • 2.转化糖浆70g,碱水1g,花生油25g倒入盆里搅拌均匀。
  • 3.筛入面粉。
  • 4.揉成团,室温放置1小时。
  • 5.莲蓉馅分成2半。
  • 6.取一个蛋黄放在莲蓉馅的中间。
  • 7.包起来。
  • 8.饼皮分成一个20g揉成团,莲蓉馅加蛋黄为80g揉成团。
  • 9.取一个皮,放入一个莲蓉蛋黄馅。
  • 10.用手往上推。
  • 11.整个包住。
  • 12.模子里撒些面粉,转一圈再倒出来,放入馅轻轻压扁。
  • 13.提着模子往下按。
  • 14.放入烤盘撒些水,先180°烤5分钟。
  • 15.拿出来再刷层蛋液,再烤15分钟即可。
