抹茶红豆面包

  • 高粉200克
  • 低粉40克
  • 细砂糖25克
  • 1/4小匙
  • 酵母粉3克
  • 抹茶粉2小匙
  • 150克
  • 黄油20克
  • 蜜红豆150克
  • 中粉130克
  • 细砂糖10克
  • 泡打粉1/8小匙
  • 80克
  • 黄油10克

Steps to make 抹茶红豆面包

  • 1.后油法把抹茶面团原料搅拌成可拉出稍具透明薄膜状的面团。
  • 2.盖上保鲜膜,室温下发酵至2--2.5倍大。
  • 3.把外皮原料搅拌成团盖上保鲜膜,松弛30分钟备用。
  • 4.发酵好的面团排气后滚圆,盖上保鲜膜,松弛约15分钟。
  • 5.擀成长约24厘米的椭圆形。
  • 6.翻面后均匀地铺上蜜红豆,用手轻轻压平再卷成橄榄形。(卷时不要太紧密,烘烤时才不会膨胀裂开。)
  • 7.外皮沾裹上高粉,擀成长约25厘米的椭圆形。
  • 8.翻面后包入抹茶面团。面团整个沾裹高粉后正面朝上放入烤盘,进行最后发酵约20分钟。(包时抹茶面团应正面朝下放在外皮表面。)
  • 9.在表面横切3个刀口,继续发酵约15分钟。
  • 10.ACA电子烤箱预热,用上火180度,下火160度,中下层烘烤约28分钟。
