【冬季养生菜】栗子鸽肉煲
冬季养生的重要原则是“养肾防寒”,饮食以滋阴潜阳、增加热量为主。冬季正是吃栗子、鸽子的好时节,栗子具有益气补脾、厚补胃肠、补肾强筋,活血止血、抵抗衰老、延年益寿的作用。而鸽子民间称为“益血动物”,具有滋阴壮阳、补肝壮肾、益气补血、祛风解毒、生津止渴、健脑补神、降低血压、调整血糖、养颜美容、延年益寿之功效。两种食材都是近年人们十分推崇的滋补身体、增进健康、冬季进补之养生佳品。

  阴冷的冬天,广东人喜欢用砂锅来做菜。用南乳腌制香煎的鸽肉,加入栗子、蒜苗、叉烧酱、蚝油砂锅焖制,鸽肉香酥细嫩,栗子香糯可口,味道真是一绝。热气腾腾端上桌,香味四溢满屋,美味又暖身,实在是不错的享受。而两种食材配搭合理,具有气血双补、补虚养身、壮腰健肾之功效。

食用禁忌:
  1、鸽肉与猪肉不能同食,否则会滞气;未经煮熟的鸽肉不能食用;先兆流产者忌过多食用鸽肉;尿毒症患者忌多食用鸽肉;体虚乏力者禁忌食用;发热和热病初愈者忌过多食用;肥胖者和小儿忌过多食用。

  • 蚝油2汤匙
  • 1茶匙
  • 清水1碗

  • 1.主料备好。
  • 2.辅料、调料备好。
  • 3.鸽子洗净剁成块,加入南乳、生抽、生粉拌匀,腌制10分钟。
  • 4.炒锅注油烧热,下入鸽块煸至鸽肉收缩呈淡黄色。
  • 5.另起锅将姜、蒜苗煸出香味。
  • 6.放入煸香的鸽肉,淋入广东米酒。
  • 7.爆香鸽肉后,放入栗子翻炒片刻。
  • 8.转入沙锅,加入1碗清水,然后调入叉烧酱。
  • 9.再调入蚝油拌匀,烧开后盖上盖子小火焖制15-20分钟。
  • 10.焖至汤汁浓稠,鸽肉酥软即可。
