长颈鹿纹可可蛋糕卷

  • 动物性淡奶油160克
  • 细砂糖(奶油用)20克

Steps to make 长颈鹿纹可可蛋糕卷

  • 1.准备材料,蛋清蛋黄分离(取4个蛋清,3个蛋黄),蛋黄中加入35g细砂糖,用打蛋器打至起泡,再依次加入水、色拉油、柠檬汁搅拌均匀,蛋黄糊中筛入低筋面粉和玉米淀粉,用打蛋器拌成均匀的面糊。
  • 2.蛋白分二次加入细砂糖30g,打至硬性发泡,提起打蛋器呈现尖角的状态,取三分之一打发好的蛋白,放入蛋黄糊中翻拌均匀,再将拌好的面糊倒回剩余三分之二蛋白中,继续翻拌成细腻糊状
  • 3.取少量原味面糊装入裱花袋,尖角剪一小口,在铺了油纸的烤盘上描绘出长颈鹿斑纹图案,放入预热好150度的烤箱2分钟拿出。油纸一定要刷层油,这样图案才不会被粘走。
  • 4.在剩余面糊中筛入可可粉,搅拌成均匀的可可面糊
  • 5.将可可面糊倒入烤好斑纹的烤盘,拿起烤盘,用另一只手轻拍底部,拍出大气泡
  • 6.放入预热好150°的烤箱,上下火,烤20分钟左右。烤好的蛋糕片马上倒扣在晾架上防回缩, 趁热撕去油纸,再盖回去,不然表面干掉容易出现裂纹,这样可以防止卷的时候出现裂纹,卷的时候容易破。
  • 7.动物淡奶油加细砂糖打成奶油霜,用抹刀抹在蛋糕体上
  • 8.慢慢卷起来,用纸包好放冰箱冷藏1小时定型。我烤的时候忘记了时间,导致开裂了。
  • 9.切片的刀用热水烫一下擦干后再切。
