凉皮是陕西小吃,外面卖的袋装的,我没吃过。我只吃过我自己做的,味道做成了我自己喜欢的!吃货只在乎它好不不好吃,不在乎它正不正宗!

Steps to make 凉皮

  • 1.面粉加水,和筷子搅成絮状
  • 2.和成面团,盖上保鲜膜,静置松弛30分钟
  • 3.开始洗面,大盆里放2碗水,把面团用力揉捏搓
  • 4.洗到面粉水变得奶白奶白的,把它倒出另一个盆子里,继续加清水,继续重复洗面,洗出的水全部倒在一个大盆子里
  • 5.这样子反复几次,直至水变得近乎清澈,面团成了面筋状,就可以了
  • 6.洗出的水全部倒在一个大盆子里
  • 7.放置1晚上让它静静地,沉淀着……(夏天要冷藏哦)
  • 8.小心把上面的清水倒掉,留底部的白色面浆
  • 9.找一个不锈钢浅盘子,刷薄薄一层色拉油(备2个盘子轮着用)
  • 10.盛一勺面浆,转动盘子,铺满盘底,放入已经烧开的水里,隔水蒸熟,表面有气泡拱起来的时候拿出来
  • 11.取出的蒸好的凉皮,隔凉水晾凉(这时候可以继续做另一个)
  • 12.取出,揭下凉皮,依次做好所有的凉皮,每个凉皮之间刷一层薄薄色拉油防粘,再叠起来放哦
  • 13.切条状
  • 14.配上自己喜欢的凉菜,淋上自己喜欢的料汁即可
