Steps to make 广式莲蓉月饼

  • 1.食材集合:中筋粉200克,转化糖浆140克、枧水5克、玉米油45克、莲蓉460克、奥利奥饼干50克。
  • 2.转化糖浆加入枧水搅匀,再加入玉米油搅拌均匀。
  • 3.搅到油完全混入糖浆,成乳化状。
  • 4.筛入中筋面粉。
  • 5.搅拌均匀,带上一次性手套用手抓捏,揉成光滑的面团,放入保鲜袋中,室温松弛2小时以上。
  • 6.奥利奥饼干剥去夹心,放入保鲜袋中用擀面杖砸碎。
  • 7.饼干碎和莲蓉充分混合均匀即可。
  • 8.用的是75克模具,馅料每个分为50克,饼皮每个25克(莲蓉馅不够了,加了两个枣泥馅)。
  • 9.取一份饼皮面团,在掌心压扁,放入一份莲蓉馅料。
  • 10.用手的虎口位置一点点往上推,直到收口收紧成圆球状。
  • 11.团圆后,放在淀粉中滚一圈,沾上些淀粉。
  • 12.搓去多余淀粉,放入月饼模具中。
  • 13.把月饼模具轻轻扣上,力道均匀向下按压,然后直接推在烤盘中。
  • 14.全部做好后,均匀喷少许雾状水静置几分钟。
  • 15.烤箱预热200度,放中层,烤制七八分钟,取出刷薄薄一层蛋黄水。(一个鸡蛋黄加一茶匙清水)。
  • 16.刷了蛋黄水后,再次放入烤箱180度,烤制15分钟。出炉后的月饼,完全晾凉再装入密封的包装袋,室温1-2天就会回油。
