日式红豆包
很久之前就想做这个红豆包了,不过一直没动手。这次终于做了,红豆沙的清甜,面包的绵软,浓浓的古早味,确实很赞,值得一试。方子来自@静心莲

Details of ingredients

  • 高筋面粉220g
  • 低筋面粉30g
  • 牛奶160g
  • 40g
  • 3g
  • 酵母3.5g
  • 黄油25g
  • 红豆沙300g

Steps to make 日式红豆包

  • 1.红豆沙每份25g,搓圆备用。
  • 2.除黄油外,将面团中的其它原材料按照底层液体,中层粉类,上层糖、盐和酵母的顺序放入面包桶中,启动一个揉面程序。
  • 3.揉至能拉出厚膜后加入黄油,继续一个揉面程序,揉至扩展阶段。
  • 4.面团团圆之后放入大碗中,盖上保鲜膜,放到温暖的地方,室温发酵。大概50分钟后,面团发酵到两倍大,手指沾面粉戳一个洞,不回缩、不塌陷即表示发酵完成。
  • 5.发酵好的面团按压排气,平均分成12个面团,将它们都滚圆之后盖上保鲜膜松弛15分钟。
  • 6.松弛好的面团压扁,用擀面杖擀成圆形面皮,中间放上豆沙馅,之后像包包子一样包起来,收口记得要捏紧,最后用手掌把面团稍微压扁。
  • 7.面团全部处理好之后一一放入烤盘中。喷下水,放到烤箱中,38℃发酵到两倍大,大概需要30分钟。
  • 8.取出发酵好的面团,表面撒上白芝麻。
  • 9.面团表面盖上一张油纸,在压一个平底烤盘,送入预热好的烤箱,中层,上下火190℃,烘烤18分钟。
  • 10.烤好的面团立即脱模,放在烤网上晾凉。
