家常奶黄包
我用的是自发面粉,不需要加酵母粉。如果用普通面粉,就按照100克面粉加1:1-1.5克酵母粉的比例添加酵母粉。面皮和奶黄馅都是清淡的甜度,我们家吃东西比较清淡。因为有俩孩子,喜欢甜口的可以加多点糖做奶黄馅、面皮。

  • 奶粉15g
  • 牛奶或清水,170-180g
  • 玉米油15g

Steps to make 家常奶黄包

  • 1.做好的奶黄馅,分成15份。用时约20-25分钟。做法在我的上一篇菜谱里有详细介绍。如有需要,请移玉步。
  • 2.面团材料放进面包桶,启动和面程序,揉面20分钟,取出面团排气,分成15个小剂子。每个小剂子多揉二三十下,再揉圆,擀成边缘薄中间厚的面皮,包入奶黄馅,收口朝下。
  • 3.我用月饼模具压出造型。蒸笼刷油或者垫油纸,做好的奶黄包胚放在蒸笼里。盖盖一次发酵35分钟左右。时间到了,锅里加水,大火煮沸上汽后继续蒸12分钟。关火,过三四分钟再开盖取出奶黄包。
  • 4.花纹隐约还在。
  • 5.香甜可口,老少皆宜。
  • 6.晾凉后密封保存,速冻存放。吃的时候复热即可。
