Steps to make 少油版地三鲜

  • 1.土豆、茄子洗净削皮,滚刀切成小块,青红椒滚刀切片。
  • 2.土豆块冷水下锅烧开后转小火煮至软透。
  • 3.碗内加入生抽、老抽、蚝油、鸡精调成酱汁。
  • 4.捞出土豆块控水,煮土豆的汤汁留作备用。
  • 5.热锅冷油滑锅,加入姜片炸香。
  • 6.放入青红椒、茄子,中小火翻炒至茄子软透。
  • 7.倒入酱汁、土豆翻炒几下。
  • 8.加入适量煮土豆的汤汁,盖上锅盖中小火焖制2分钟左右。
  • 9.加入蒜片翻炒几下。
  • 10.大火收汁,撒上葱花。
