春天来了,万物开始复苏,田野里“鼠曲草”也生长茂盛,鲜嫩鲜嫩的,尤其是清明前还没开花的时候,当地人俗称“青”,摘点回家做青团又香又好吃。青团一般做咸甜两种,这次换种口味,做了咸蛋黄肉松馅的,外皮软糯,内馅咸香可口,很美味。

    Steps to make 蛋黄肉松青团

    • 1.鼠曲草拣去杂物洗净。
    • 2.在沸水中焯水,捞出过凉水。
    • 3.放在料理机中打成菜糊。
    • 4.放到奶锅中煮沸。
    • 5.趁热放到糯米粉和面粉的混合粉中(比例为1:1)。
    • 6.和成面团,盖保鲜膜饧发半个小时。
    • 7.咸蛋黄蒸熟。
    • 8.蛋黄压碎,和肉松一起团成小球。
    • 9.取小块面团,压扁放水蛋黄肉松,包好,收口朝下。
    • 10.全部做好。
    • 11.放到蒸锅中。
    • 12.大火烧开转中小火12分钟(时间视青团大小来定)。
    • 13.蒸好的青团稍微散发下热气再吃。
