咸排叉与姜丝排叉一样,不同的是它不过蜜,有酥、脆、味微咸的特点,爱喝酒的人常以咸排叉当下酒菜用。
旧天桥有专门卖小炸食的店家,如面炸不盈寸的麻花排叉,用草纸包装,加上红商标,时过年送礼的蒲包,又是小孩的玩物。"对这种小炸食前人还有诗称赞说:"全凭手艺制将来,具体面微哄小孩。锦匣蒲包装饰好,玲珑巧小见奇才。"过去天桥卖这类小炸食的还要吆喝:"买一包,饶一包,江西腊来,腊秦椒。大爷吃了会撂跤,撂官跤,跛子跛脚大箍腰。大麻花,碎排叉,十样锦的花,一大一包的炸排叉。"小孩听到了,多喜欢去买。

    Steps to make 京味小吃:排叉

    • 1.材料:面粉、盐、黑芝麻、清水、食用油。
    • 2.面粉放入盆中,加入清水、盐、食用油和黑芝麻,反复混合揉捏,和成面团。
    • 3.将面团盖上湿布饧制20分钟。
    • 4.用擀面杖将面团擀成薄片,厚度越薄越好。
    • 5.把面皮卷在擀面杖上,用刀从擀面杖上纵划一刀。
    • 6.分切成短而窄的面片。
    • 7.每两片面片放在一起,折叠一下。
    • 8.在中间切三刀,中间长两边短;面片打开,其中一边的两个角从中间最长的刀口中穿过,再向两头轻轻拉伸。
    • 9.制成若干排叉生坯。
    • 10.油烧至7-8成热,放入排叉炸至金黄色。
    • 11.捞出沥干油,晾凉后食用。
