紫薯花纹蛋糕卷

那么,当你被戚风蛋糕折磨时,不妨来试试戚风蛋糕卷,虽然它也是用戚风的操作手法,但是对具体要求却没有戚风那么高,即便有哪一步不到位,也不会那么容易失败。

  • 蛋白4个
  • 细砂糖65g
  • 玉米油40g
  • 牛奶70g
  • 低筋面粉90g
  • 紫薯粉1小勺
  • 淡奶油100g
  • 糖粉15g

Steps to make 紫薯花纹蛋糕卷

  • 1.取一张油纸,在表面用铅笔画出不规则纹路
  • 2.铅笔痕迹一面朝下垫入烤盘中,四周折起备用
  • 3.蛋黄中加入35g细砂糖
  • 4.打发至颜色变浅的粘稠状态
  • 5.倒入玉米油
  • 6.倒入牛奶
  • 7.搅打均匀
  • 8.筛入低筋面粉
  • 9.用刮刀翻拌均匀,放在一边备用
  • 10.蛋白中滴入几滴柠檬汁,分次加糖打发至湿性发泡状态
  • 11.取约1/6蛋黄糊加入紫薯粉
  • 12.拌匀
  • 13.取约1/6蛋白加入到紫薯蛋黄糊中
  • 14.翻拌均匀,并将其他蛋白放到冰箱中冷藏备用
  • 15.将拌匀的紫薯蛋糕糊装入裱花袋中,在烤盘上按照纹路挤出相应的形状
  • 16.送入预热好的烤箱中层,170度烘烤1分钟,出炉晾凉备用
  • 17.取出剩余的蛋白,分次加入蛋黄糊中
  • 18.混合拌匀成原色蛋糕糊
  • 19.倒入晾凉的烤盘中
  • 20.轻怕几下烤盘底部,送入烤箱中层继续烘烤约20分钟;注意出炉后轻摔一下烤盘,然后将蛋糕片移出烤盘,揭开油纸并轻划几刀备用;
  • 21.淡奶油中加入糖粉,垫冰袋打发,然后均匀的涂抹在蛋糕片上,注意尾部不要抹奶油
  • 22.借助擀面杖将蛋糕片卷起,用油纸包裹住冷藏定型后可切件食用
